Well, you're not really doing anything wrong. You're just not doing everything as right as you could be.
First: Keep your shield up at all times. You have to do this if you want to survive a surprise encounter.
Second: Lure enemies out one at a time. Even the best players can't win against overwhelming numbers.
Third: Check corners before walking into a big room or down a tight corridor.
As for the spear guys, hit them and immediately put your shield up. They'll retaliate, hit your shield, recoil a bit, and leave an opening for you to hit them. It'll take a few practice tries, but you should pick up on how to do it relatively quickly.
And yes, you have to kill that big guy. He's not so hard so long as you're facing him one-on-one; that said, if you try to fight him in the church, you'll get blindsided by magic. There's a hostile priest on the second floor of the church who will hurl magic at you continuously, so just lure the big guy out. As long as you keep your shield up and roll to the side when he does an overhead attack, you'll probably beat him. Just be smart about your attacks; don't overextend yourself.
On that note, start circle-strafing your enemies. If you stay in front of them, they're more likely to attack. If you circle them, they'll attack at where you were at the beginning of their attack animation, not where you are, causing them to open themselves to a side attack or a nice backstab.

Eh, parrying is kinda difficult. I'd save that for later in the game when you're running through an area you're way overleveled for. I wouldn't risk trying to learn how to do it in a new area.
