So I bought this, and I just started, I'm in the first world, having already beat Dark Souls... I know how to play, but is there anything different I should know about? Anything I should/shouldn't do?

Alright, a few things:
Go nuts with your healing items. Seriously. Crescent Moon Grass is literally everywhere, and you find a vendor later in the game who will sell you all kinds of good stuff. If you look around in the first level alone, you'll have a good amount of Half Moon Grass as well. The blue-eyed knights also drop HMG pretty regularly, so once you're comfortable fighting them, farm them.
Feel free to spam the roll action. Unlike in Dark Souls, in Demon's Souls you're invulnerable while rolling, and you don't have that delay when attacking directly after rolling. If you start to panic, roll the f*** away from what's killing you.
Also, the equip burden works a bit differently. In Dark Souls, you had slower movement and rolling at 25% equip burden. In Demon's Souls, the only time you slow down is at 50%. At the same time, armor is basically useless apart from status resistances, so just wear whatever set you like as long as you're under 50%.
Upgrade your weapons. Pick a skill to specialize in (i.e. magic/intelligence, strength, dexterity), find a weapon with a good scaling factor for that skill, reach the minimum requirements needed to use the weapon, then pump Vitality, Endurance (only to 40, unless you mean to go well over Soul Level 120), and whatever that skill is. This maximizes your damage output.
That's all I can think of at the moment. It's a shame you guys got it so late, because the servers were shut down a few weeks ago. We could have had super awesome adventures. :(

When I got on, it said the extended the time for the servers... it said "we were supposed to shut them down in May but we've extended them" and then it logged me in. D:

Also, is there a certain order I should do stuff in? I beat 1-1 in one shot. I was told 1-2 or 2-1 would be good next...

Holy ****, seriously? Oh hot damn, I'm so happy right now. I love those server maintenance people, whoever they are. This is like the second or third time they were going to shut down the servers but decided not to. Awesome. Also, is there a certain order I should do stuff in? I beat 1-1 in one shot. I was told 1-2 or 2-1 would be good next...
You can do it in whatever order you like (to an extent), but yeah, 1-2 or World 2 would be your best bet now. World 2 is pretty quick.
