In the case of BC2 and Frostbite 2 vs MW2 or whatever CoD game that came out that year, I actually wouldn't be surprised if the character models themselves were also higher res. The more obvious differences between the two engines would be when it came to things like player count, map size, map interactivity (distruction and such) and all the various land and air vehicles in the game. You also have to take into account the different physics needed to make vehicles work in the game.

The CoD engine I believe was created back in 1999 and released with Quake, which is an arena shooter. Like Quake, CoD doesn't really support all of the things I listed above. Meanwhile Frostbite engine was released in 08 I believe with Bad Company and it needed to be a strong engine that could support all the things that DICE wanted to include in their game.

Now with FB3 and BF4, everything has been taken to a higher level. Character models have higher poly counts and they're taking advantage of better tools to make more detailed worlds. Lighting, shadows, textures, they've all been improved boyond what the CoD engine seems to be able to handle based on the tech demo. And again, DICE have added more map dynamics in BF4 and have come out and said that they could now do it thanks to the upgraded engine.
